NEW YORK (MYFOXNY) - Stew Leonard Jr., owner of the Stew Leonard's chain of food stores, is preparing lobster rolls in the Good Day Cafe on Friday.

Leonard Jr. is president and chief executive officer of Stew Leonard's, a family-owned and operated, farm-fresh grocery stores once called the "The Disneyland of Dairy Stores" by The New York Times for its in-store entertainment and costumed characters.

Since Stew took over as president and CEO in 1991, the company has grown to include four food stores with various locations in Connecticut as well as a Yonkers, NY location.

Stew Leonard's began as a small dairy store founded in 1969 with just seven employees. Today, Stew Leonard's is still family-owned and operated, but has grown to become a nearly $400 million dollar business with more than 2,000 employees. The company has received worldwide acclaim for excellence in customer service and quality and has been selected to FORTUNE magazine's "100 Best Companies to Work for in America" list for ten consecutive years.

Stew Leonard's Lobster Rolls

Makes 4 big lobster rolls

Ingredients:

1 lb lobster meat

4 Potato Rolls

1/2 Cup Mayonnaise

1 Tablespoon of fresh chopped dill

1/4 Cup of chopped red onion

1/4 Cup chopped celery

1 teaspoon of hot horseradish

Pinch of black pepper

Gently mix all the lobster meat, mayonnaise, dill, red onion, celery and horseradish together in a bowl. Generously spoon the mixture into the potato rolls and serve.

    Hollywood icon Joan Rivers, 81, is reportedly on a slow road to recovery after she went into cardiac arrest at a New York City doctor's office. Rivers remains in serious condition at The Mount Sinai Hospital in Manhattan, according to her daughter, Melissa Rivers.  Doctors were expected to slowly remove Rivers from a medically-induced coma on Tuesday to asses her brain functionality.
