Limited choices in NYC for certified authentic Neapolitan pizza

Spend 20 minutes with Via Tribunali Pizza manager Giuseppe Giordano and you get the sense he can make any preparation of any dish sound delicious. But when Giuseppe talks pizza, he talks of history and tradition and -- in his judgment -- one of the great unreported crimes against the human palette.

"Finally people are starting to understand and appreciate pizza Napoletana, which has been really bastardized throughout the world," he says.

For this Naples native, the preservation of the original Napoletana-style pizza requires the existence of a sort of pizza high council.

Donato Rumi works for that high council, a 30-year-old Naples nonprofit that approved Giuseppe's Via Tribunali as one of only three pizza joints in all of New York City certified as making authentic Napoletana-style pizza.

"We are very precise and very picky," Rumi says. The group sends over someone to inspect the entire process.

And at Via Tribunali, that process requires precise ingredients, training, and preparation that ends in a custom-built, 900-degree wood-fired oven made from lava stone imported from the Vesuvius region of Italy.

"It's home," Giuseppe says. "It's my heart."

It is a thin pizza made with only a few ingredients, the dough pushed out to make the borders a little thicker, and a crust that's always hollow.
