Fruit parfait, Nutella-stuffed French toast

Fruit Parfait

Ingredients:

· Greek Yogurt – 2 cups

· Granola – 2 cups

· Fresh Berries – 2 cups (strawberries, blackberries, raspberries or any preferred variety)

· Local Minnesota Honey – 2 tbsp.

· Fresh Mint – 4 sprigs

Directions:

1. Mix honey in with yogurt in separate bowl.

2. Spoon 2 tablespoons of yogurt into each glass. Smooth surface of yogurt with spoon.

3. Combine 1 teaspoon of sugar and fresh berries in separate bowl.

4. Spoon 2 tablespoons of granola overtop the yogurt. Smooth surface of granola with spoon.

5. Spoon 2 tablespoons of fruit overtop the granola.

6. Repeat the process to the top of the glass. Finish off with fresh berries and a sprig of mint.

Stuffed French Toast

Ingredients:

Egg Batter

· Sugar – ½ cup

· Eggs – 2 large

· Ground Cinnamon – 1 tsp.

· Vanilla Extract – 2 tsp.

· Heavy Cream – 1 cup

Filling

· Fresh Strawberries – 1 cup, chopped

· Cream Cheese – 1 ½ cups

· Sugar – ¼ cup

· Nutella (or your favorite chocolate spread) – ¼ cup

· Vanilla Extract – 1 tsp.

Toast

· Thick Bread – 8 slices

Directions:

1. In a stand mixer, combine Nutella and cream cheese until smooth. Add sugar and vanilla extract and mix until combined. Carefully fold chopped strawberries into Nutella mixture.

2. Combine the ingredients for egg batter in medium-sized bowl. Whisk the ingredients together.

3. Spread the Nutella filling between two slices of bread. Set the French toast sandwiches in a deep baking dish. Carefully pour the egg batter over the sandwiches.

4. Tightly cover the French toast and refrigerate for at least two hours.

5. When you’re ready to prepare, uncover the dish and bake at 400 degrees for 28-35 minutes.

6. Before serving, sift powdered sugar over top the toast. Garnish with a dollop of Nutella and sliced fresh strawberries.
