Chipotle Chicken Wraps
4- Cooked chicken breast halves from Mexican Chicken and Vegetables with Chipotle Peppers
1- cup tomato mixture from Mexican Chicken and Vegetables with Chipotle Peppers
6- 8 inch fat-free flour tortillas (lowest sodium available)
½ cup fat-free sour cream
½ cup finely chopped red onion
¼ cup snipped fresh cilantro (optional)
12 medium black olives, quartered
Pepper to taste
Fresh lime juice to taste
In a small saucepan, warm the reserved chicken and tomato sauce mixture over medium heat for 10 minutes, or until heated through, stirring occasionally.
Using the package directions, warm the tortillas.
To assemble, layer as follows down the center of each tortilla: chicken mixture (use a slotted spoon), sour cream, onion, cilantro, olives, pepper and lime juice.
Fold both sides of each tortilla to the center. Starting from the bottom, roll each wrap to the top to enclose the filling.?
