The old, vacant Hamm's brewery in St. Paul has been turned into something a little greener, but the 105-year-old establishment is staying true to its local roots. Except it's not beer, it's hyper-local organic farming.
Urban Organics uses an agricultural technique called aquaponics in which a combination of aquaculture – raising fish in tanks – and hydroponics – growing plants in water – come together in symbiosis. Water from the fish flows to produce growing in racks above the nutrient-rich water and returns to the fish tanks.
