La Mia Dolci's wicked awesome whoopie pies

Get this recipe courtesy of Kate Diliddo from La Mia Dolci in Shelby Township.

Ingredients:
2 cups all purpose flour
½ cup Dutch process cocoa powder
1 ¼ tsp baking soda
1 tsp salt
1 cup well shaken buttermilk
1 tsp pure vanilla extract
1 stick unsalted butter, softened
1 cup packed brown sugar
1 large egg

Method:
Preheat oven to 350*
Whisk together flour, cocoa powder, baking soda, and salt in a bowl until combined.
Stir together buttermilk and vanilla in a small bowl or measuring cup.
Beat together the butter and brown sugar in a large bowl with an electric mixer at medium speed until pale and fluffy.
Add egg and beat until well combined.
Reduce speed to low and alternate between adding flour mixture and buttermilk mixture, beginning and ending with flour, mix until smooth.
Scoop out ½ cup mounds of batter about 2 inches apart on parchment paper lined sheet pans.
Bake until tops are puffed and cake springs back when touched, 11 to 13 minutes.
Transfer to a rack to cool completely.

Cover flat side of one cake with Buttercream frosting and top with another cake - you have a Wicked Awesome Whoopie Pie!
