Quinoa Veggie Burgers

Quinoa Veggie Burgers

Ingredients:

1 cup cooked quinoa

1 T evoo

1 red onion, chopped

4 cloves garlic, minced

1 shallot minced

3 cups cooked black beans

2 T tomato paste

1 T peanut butter

1 large egg

1 cup cooked corn

¼ cup chopped cilantro

¼ cup chopped parsley

1 T minced chipotles in adobo

1 t ground cumin

1 cup ground oats

Directions:

Heat the oil in a small sauté pan over medium heat and add the onion and garlic. Season them with a pinch of salt and sauté until onions are slightly browned. Place the mixture into a large bowl. Add black beans to the bowl and using a potato masher or fork, mash all of the ingredients together until a pasty mixture forms.

Stir in the remaining ingredients until evenly distributed.

Form the mixture into 2 ounce patties. Place the patties on a baking sheet, cover them with plastic wrap and refrigerate for at least a few hours or overnight.

Brush patties with evoo and bake in a pre-heated oven for 15-20 minutes until patties are lightly browned.

Serve on Turkey buns with fresh spinach, sliced tomatoes and red onions.

Garnish with yogurt sauce.

Yogurt Sauce:

2 cup Greek yogurt

1 T chopped chipotle peppers

1 T honey

1 t Dijon mustard

To make the yogurt sauce, stir the yogurt, chipotles, adobo sauce, honey and mustard together in a small bowl.
