3 clean eating recipes for Easter

Balsamic asparagus

1 bunch asparagus

1 1/2 cups halved grape tomatoes

3 cloves minced fresh garlic

2 tablespoons balsamic vinegar

Pinch of sea salt teaspoon salt

2 TBLS shredded parmesan cheese

1/2 teaspoon black pepper

Prep

1. 1. Cook asparagus in boiling water 2 minutes or until crisp-tender. Drain.

2. 2. Heat olive oil in a large skillet over medium-high heat. Add garlic, then tomatoes; cook 5 minutes. Stir in vinegar; cook 3 minutes. Stir in salt. Arrange asparagus on a platter; top with tomato mixture. Sprinkle with cheese and pepper.

Ginger lime carrots

1 pound baby carrots peeled

1 tablespoon EVOO

1 teaspoon minced peeled fresh ginger

1 tablespoon chopped fresh cilantro

1/2 teaspoon grated lime rind

1 tablespoon fresh lime juice

Preparation

1. 1. Prepare garlic; let stand 10 minutes.

2. 2. Steam carrots, covered, 10 minutes or until tender.

3. 3. Heat EVOO in large skillet over medium heat. Add garlic and ginger to pan; cook 1 minute, stirring constantly. Remove from heat; stir in carrots, cilantro, lime rind and lime juice. Stir carrots in sauce until covered. Pour all ingredients on serving tray including the left over sauce.

Horseradish hummus deviled eggs

6 hard boiled eggs

1/3 cup hummus

2.5 tsp fresh ground horseradish

1 tsp flax oil or EVOO (I use flax oil because of all the added health benefits)

Pinch of black pepper

Dill and or paprika for garnish (I use both but either or is fine)

Preparation

1. Cut the eggs in half length wise and scoop out the yolk into a mixing bowl. Mix egg yolks, hummus, horseradish, flax oil and pepper together. Scoop a large spoon full of mixture into each egg and sprinkle a little garnish on each egg.
