Cooking for loved ones that suffer from peanut allergies can seem difficult, yet with a few tricks you can alter favorite recipes so everyone can enjoy the deliciousness! I use SunButter, which is a healthy alternative to peanut butter - made from roasted sunflower seeds.
When using this alternative in baking you need to keep two things in mind:
1 - Reduce the amount of leavening agent, by half or a third. If using the full amount, the chemical reaction that takes place during baking will discolor your dish and it may not look visually appealing - although it will still be edible.
2 - Baking times may need to be extended. I find that I need to add roughly 15%-20% more baking time to achieve the desired end result. I have not noticed any difference in cooking with SunButter.
