Smack Shack Gumbo


2 cups cooked rice

½ cup unsalted Butter

½ cup AP flour

1 onion small dice

1 stock diced celery

1 green pepper seeded & diced

1 large tomato seeded & chopped

1 clove garlic minced

2 sprigs fresh thyme

2 dry bay leaves

2 qts stock (seafood or chicken)

1 cup sliced fresh okra

1 lb sliced Smoked Andouille Sausage

1 lb raw 31/40 shrimp (cleaned & de-veined)

1 tsp Worcestershire sauce

1 tbsp Gumbo Filé

4 dashes Tabasco

Salt & pepper to taste



Heat butter in heavy bottom pot over medium high heat. Whisk flour into butter stirring constantly creating a "roux". Add onions and reduce to medium-low heat, stirring until mixture reaches a glossy dark brown, about 10 minutes.

Add andouille, stir for 1 minute then add celery, green pepper, tomato & garlic & cook for 3 minutes stirring occasionally. Add thyme, stock & bay leaves & bring up to boil, then reduce heat to medium low & simmer for 45 minutes.

Add shrimp & okra cooking for 2-3 minutes. Follow with remaining ingredients & season to taste with S&P.


Serve over fresh cooked rice
