Pesto's pan fried crabmeat stuffed soft shell crab poboy

Ingredients:
6 soft shell crabs
2 cups canola oil
2 cups crabmeat stuffing (see recipe)
1 cup caper dill aioli (see recipe)
1 cup seasoned flour (mix 1 cup flour, 1 Tablespoon Paprika, 1 teaspoon each granulated garlic, salt, Lawreys, 1/2 teaspoon white pepper)
Egg wash (mix 4 eggs, 1/2 cup milk, pinch salt and black pepper, 2 shots Tabasco)
1 cup cheddar jack cheese shredded
2 cups mixed salad greens
2 tomatos sliced
6 pretzel buns

Slide open back of Soft shell Crab and fill with 1/3 cup Stuffing, dredge in seasoned flour, egg wash, seasoned flour.

Heat skillet to med high heat, add 1 cup canola place soft shell crab in pan (laying down away from you) lift up with spatula to displace the grease, let cook for 5-6 minutes, flip away from you, law of displacement, let cook 5-6 minutes till done.  Remove from Heat, drain off grease ( can place in low temp oven till ready to assemble)

Toast Pretzel buns with cheddar jack cheese, assemble with Soft Shell Crab, tomato, mixed greens, and 2 Tablespoons of Caper dill Aioli. Enjoy

Crabmeat Stuffing Recipe
1/2 cup onion finely chopped
1 Tablespoon fresh garlic minced

In a medium saute pan, bring to med low heat, add:
1/2 oz. Butter, sear garlic add onions, sweat with 1/4 cup Chablis, cover, until onions translucent

Add: pinch of each white pepper, cayenne pepper, nutmeg

1 Tablespoon PESTO
1 teaspoon each lemon juice, Worcestershire
1 Tablespoon Old Bay Spice
1 Tablespoon sun dried tomatoes, chopped
6 oz. Heavy Cream
2 teaspoons yellow Mustard

Bring to a boil and reduce for 4 minutes, remove from heat and add

1 can lump or back fin crabmeat
1/2 cup panko bread crumbs
2 Tablespoons Italian bread crumbs

Stir, finish with 1 egg ( mix quickly so egg does not cook)
Add 1 Tablespoons shredded Parmesan
Cool

Caper Dill Aioli

Mix in a Bowl with a whip:
1 Cup Mayonnaise
1 Tablespoon Red onion finely diced
1/2 tablespoon fresh garlic minced
1/2 tablespoon stone ground mustard
2 teaspoons lemon juice
2 tablespoons capers
1/2 teaspoon dried dill
Dash Tabasco
pinch Salt and Pepper
