Simple Chocolate Ice Creamby Keith Marler
3/4 cup sifted cocoa powder1/2 cup granulated sugar1/3 cup PACKED dark brown sugarPinch salt1 cup whole milk2 cups heavy cream1/2 tablespoon pure vanilla extract
Combine cocoa powder, both sugars & salt in a large mixing bowl.
Whisk together until blended.
Add milk & beat together using a hand mixer (on low setting) until everything is dissolved.
Add heavy cream and vanilla & SLOWLY STIR BY HAND (do NOT whip.)
Cover bowl & refrigerate for 1 to 2 hours (even overnight is fine)
After chilled, Pour mixture into Ice Cream maker & churn until thickened (15 to 20 minutes for soft, creamy texture).
