The Southshore Sizzle

6 oz filet mignon stuffed with garlic, white onion, fennel, mushroom, fontanini sausage, blue cheese crumble, ginger and topped with red pepper, green onion, red wine Marsala sauce.


8 oz filet mignon
3 oz ground mild sausage
1 tsp minced garlic
1/4 C white onion
1/4 C fresh fennel
1/4 C button mushroom
1 tsp fresh ginger
3 oz gorgonzola
1 oz red pepper
1 tsp green onion
1/2 C Marsala sauce


Butterfly Filet. Heat and reduce Marsala sauce until thick and creamy. Brown sausage. Sauté garlic, white onion, fennel, mushroom, ginger until soft with slight crisp texture. Mix sausage and veggies and gorgonzola. Stuff filet with mix.  

Sauté  red pepper separate until soft yet crisp. Pan sear filet on both sides until desired temp.

Place on plate and finish with topping filet with Marsala reduction.
