Hawaiian pork tenderloin with pineapple relish

Hawaiian pork tenderloin with pineapple relish and coconut haupia

Pork Marinade

¼ cup soy sauce

¼ cup coconut milk

¼ cup rice wine vinegar

¼ cup pineapple juice

1 T diced garlic

1 T diced fresh ginger

2 T honey

Pinch salt & pepper

Mix thoroughly. Marinate pork tenderloin 3-4 hours. Cut into 2 inch thick medallions. Grill or sauté for approximately 3-4 minutes per side


Fried onion strings

Toasted coconut

Pineapple Relish:

1 pineapple cut into ¼ inch cubes

1 sweet red pepper small diced

1 jalapeño pepper minced

1 cup minced red onion

¼ cup chopped parsley

1 t fresh ginger minced

1 t molasses

1 T rice vinegar

Pinch of salt & pepper

Mix thoroughly.

Coconut Haupia

1 can coconut milk

½ cup sugar

¼ t lemon extract

¾ cup water

¾ cup heavy cream

¼ cup cornstarch


Place coconut milk, sugar, lemon extract, water in a heavy bottom sauce pan on med-high heat!

Mix cream and cornstarch together in a separate bowl. When the coconut mixture comes to a boil, slowly stir in cream/starch mixture! Let simmer 2-3 minutes. Remove from heat and place mixture in a saran wrapped lined 9x9 pan. Place another piece of saran directly on the coconut mixture and refrigerate overnight.
