Super Bowl Sliders from Mercury Burger Bar

Mercury Burger Bar

Buffalo Sliders  - Aka Bucking Broncos

5# Ground bison
2 cups diced Onion
1/4 cup chopped garlic
1/4 cup worcestershire sauce
Vegetable oil
salt & pepper to taste
Hawaiian sweet rolls

1. In a skillet caramelize diced white onion. Aprox. 5 minutes, set aside and cool
2. In a bowl combine ground bison, caramelized onions, chopped garlic and worcestershire sauce. Fold in ingredients until just combined. be sure to not over mix as it will result in a tougher burger
3. Form into 3 ounce slider patties
4. In a skillet add your oil and heat. once your oil is hot enough season your sliders and cook to desired doneness.
5. slice your Hawaiian sweet rolls in half and butter the cut side and toast.
6. once your sliders are done assemble.

Tornado Dog

aka the all beef touch down  my take on pigs in a blanket


Your choice of dog preferable a 5-1 all beef hot dog
Flour
12" bamboo skewers
Tempura batter:
1 1/4 cup all-purpose flour
2 teaspoons baking powder
1 egg
1 cup water
1 tablespoon vegetable oil
vegetable oil, for deep frying

Stir the flour and baking powder together in a medium bowl. Whisk the egg, water, and oil in a separate bowl, just until blended. Stir the egg mixture into the dry ingredients until a slightly lumpy batter forms. The batter should be thick enough to coat the hot dog. Let the batter rest for 10 minutes.

Pour enough oil into a 2 qt. saucepan to 2" deep. Heat over medium heat until 350 degrees F. Skewer all your hot dogs, then using a knife cut the hot dog from top to bottom in a spiral motion. Dust the skewered hot dogs in flour. Dip the hot dog  into the batter and then immediately into the hot oil. Deep fry until the batter is golden brown and the hot dog is cooked through. Remove with a slotted spoon and drain on a rack or on paper towel.
