How to make an Achatz apple pie

(WJBK) -- In honor of National Pie Day on Jan. 23, the folks at Achatz Handmade Pie Co. are showing us how to make their delicious apple pie.

Preheat Oven to 350 degrees.

Pie Dough:  Makes top and bottom crust for one pie.

Mix:
2 ½ cup pastry flour, unbleached.
1 teaspoon sugar
1 teaspoon sea salt

Then Add:
1 cup Achatz Special Blend Shortening-(Trans-fat free)
Or you can use ½ cup butter and a ½ cup Achatz Special Blend
Cut room temperature shortening into flour with fingers until crumbly, yet not too blended.

Add:
½ cup chilled water.
Do not over mix at this point. Dough will be sticky. Cover with plastic wrap or wax paper and allow to set in refrigerator for 1 hour.

Apple Filling:
7-cups thinly sliced apples
¼- ½ cup sugar
¼ cup brown sugar
¼ cup flour
½ to 1 teaspoon cinnamon
1/8 teaspoon salt
3-4 Tablespoons butter

Bake for 15 minutes at 375, then lower temp to 350 for one hour.

For 8" inch pies, bake at 350 for 45-60 minutes.  To make sure pie is done, insert fork into apples to make sure they are soft.  If still firm, put back into oven for 10 additional minutes.
