Clean & Lean Fit quinoa tabouli

Quinoa Tabouli

Ingredients:

1 cup quinoa, rinsed very well to remove the bitter coating, strain quinoa in a fine mesh colander 

1/2 teaspoon sea salt 

1 ¼ cups water fresh squeezed lemon juice from one lemon (about 2 tablespoons) 

1 garlic clove, finely minced 

1/2 cup extra-virgin olive oil 

Drop of mint extract 

1 large cucumber, cut into tiny pieces 

3 Roma tomatoes, cut into tiny pieces 

2/3 cup finely chopped flat-leaf parsley 

1/2 cup finely chopped fresh mint 

2 green onions, thinly sliced 

Freshly ground black pepper 

Pinch of sea salt 

Instructions:

Bring quinoa, 1/2 tsp. salt, and 1 1/4 cups water to a boil in a medium saucepan over high heat. Reduce heat to medium-low, cover, and simmer until quinoa is tender, about 10 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork. · Squeeze lemon juice into a medium size bowl, add the clove of finely minced garlic, and a drop of mint extract. Gradually whisk in ½ cup extra virgin olive oil. · Add quinoa, pieces of cucumber, tomatoes, finely chopped parsley and fresh mint, and thinly sliced scallions to bowl; toss to coat. Season lightly with salt and pepper.
