Coconut balls, sesame seed cashews

Coconut Balls

No bake, easy make, coconut balls Have a pan ready with parchment paper before you start melting and stir the ingredients. You won't have time once you start the process.


2 cups unsweetened dry coconut
1/4 coconut oil 3 TBS pure maple syrup
1.5 cups melted dark chocolate
1/4 skim milk

Dump ingredients in a preheated sauce pan. Melt and mix all ingredients together. Stir constantly or it will quickly burn. The entire process should take about three minutes. After everything is melted and mixed, take a spoon and make small balls and plop them on your pan and cool them. The cooling process is important. They are good warm, but they are amazing cold!

Sesame Seed Cashews

While shopping this evening I found a fun snack, honey and sesame seed cashews. Unfortunately, when I looked at the ingredients, sugar was listed. Instead of caving I went home and made them myself! To my surprise, they are easily one of the quickest snacks I've ever made.


2 cups cashews
2 TBLS honey
3 TBS sesame seeds

Before you start make sure you have a piece of parchment paper to put the nuts in when they are done cooking.

Heat a frying pan over median heat on the stove (I put the nuts in before it was hot). Add honey. Mix the nuts in the honey, then add the seeds.

You need to constantly be stirring the nuts or they will burn, but they don't take long to cook.

You will know they are done when they turn a little golden. They will just barely turn color.

After they are done lay them on the already cut parchment paper to cool.
