Minneapolis Registered Dietitian Christina Meyer-Jax mixes up some skinny cocktail recipes for New Year's Eve.
Muddle 4 watermelon cubes with cilantro, add ½ oz of agave nectar (or sugar free sweetener like a stevia syrup), ½ oz lime juice, 1 ½ oz silver tequila, shake with ice, fine strain into a rocks glass, add cubed ice and top with watermelon punch fruitwater, garnish with watermelon cube and a cilantro sprig.
In a tin shaker, add ½ oz of lemon juice, 1 ½ oz of gin, ½ oz of crème de mure, ½ oz raspberry liquor, shake with ice, strain into a martini glass and top with chilled black raspberry fruitwater garnish with a sunken blackberry.
Grilled lime mojito
In a tin muddle 6 to 10 mint leaves with a grilled lime wedge, add ½ oz lime juice, ½ oz of agave nectar, 1 ½ oz of anejo rum, shake with ice, strain into a tall glass with ice, top with lemon-lime fruitwater, garnish with a long mint sprig and an additional grilled lime wedge.
Spicy mango cocktail or mocktail
In a tin, add 1 oz mango puree, ½ oz lime juice, ½ oz oj, ½ oz honey and/or 1. 5 oz rum and a pinch of chipotle seasoning, shake hard with ice and strain into a tall glass with ice, top with mango orange fruitwater, garnish with an orange wheel sprinkled with chipotle seasoning.
*for all fruitwater cocktails, a Stevia simple syrup could be used in place of agave or honey.
