5 pounds of potatoes 3 eggs 2 yellow onions Salt and pepper to taste 1 tsp Lemon juice Oil for frying
Procedure: Peel potatoes. Cut into large pieces and submerge them in water with a tsp of lemon juice to prevent browning. Pulse potatoes and onions in a food processor until its between the size of corn and rice. Drain well. Add eggs, salt and pepper. Heat 1/4 inch of oil in frying pan. Add heaping tablespoon of latke mix to fill pan. Press down to flatten. Turn over after sides are golden brown and cook for a few more minutes. Serve with sour cream or apple sauce.
