Tom Butler prepares his mother-in-law's Thanksgiving side dish, dubbed Bonnie's Cheesy Potatoes.
2 pounds frozen cubed hash browns
1/4 cup butter
1 can cream of chicken soup
2 cups shredded cheddar cheese
1 pint light sour cream
1/2 cup onion, chopped
2 cups corn flakes, crushed
1/2 cup melted margarine
Mix first 6 ingredients. Put mixture in well greased 9 x13 baking dish. Top with topping if desired. Bake at 350 for 40 minutes.
-Partially defrost potatoes before preparation.
-Use a zip-lock bag to crush the cornflakes.
-Can be prepared the day before and kept in refrigerator, but the corn flake topping should be added right before baking.
-Can be served for breakfast, brunch or dinner.
