Savory hush puppies, BBQ baked beans and avocado coleslaw for NFL Sunday

Chef Dan Vasterling from St. Paul College fixes up hush puppies, baked beans and cole slaw for NFL Sunday.



1 ½ cup cornmeal

½ cup AP flour

½ t. baking soda

½ t salt

½ cup fine diced red onion

¼ cup fine diced red pepper

1 cup butter milk

1 egg

4-6 cups canola oil


Mix dry ingredients together with onion and peppers

Mix eggs and buttermilk together

Add egg mixture to dry ingredients just until dry mix is hydrated. (do not over mix)

Using a deep pot, preheat oil for frying to 350 degrees F.

Spoon drop batter into hot oil and fry until golden brown

Remove from hush puppies from the oil place on paper towels to drain and salt lightly




½ lb bacon lardon cut

1 yellow onion fine diced

2 12 ounce cans of pork and beans

½ cup BBQ sauce

¼ cup brown sugar

¼ cup molasses

2 T. apple cider vinegar

1 T. Dijon mustard


Brown bacon in a 2 quart sauce pan

Add the rest of the ingredients and simmer 30-45 minutes


Dressing ingredients

1 ripe avocado, peeled and cubed

1/2 cup buttermilk

1 tablespoon mayonnaise

1 small garlic clove, chopped

3 tablespoons fresh lime juice

2 tablespoons fresh chopped cilantro

Salt and black pepper

Mix thoroughly

Cole Slaw ingredients

4-5 cups shredded cabbage

1 cup cooked corn

1 cup cooked black beans

1/2 cup red onion, diced small

1 jalapeno fine diced

Add dressing and mix thoroughly.
