Twilight Foundation to host Awards Gala on Sept. 14

Parmesan Encrusted Chicken

Servings: 4

Ingredients:
4 -6 ounces chicken breasts, butterflied
flour
salt and pepper
3 eggs
grated parmesan cheese
canola oil
chopped parsley
1 clove garlic
minced salt and pepper

Directions:
Butterfly chicken breasts so they are thin.
Lightly season with salt and pepper.
Dust chicken breasts with flour.
Combine whole eggs, parmesan cheese, parsley and garlic to form a batter.
Pan Fry chicken until golden brown.
Transfer chicken to platter and serve with Mushroom Artichoke Ragout

Mushroom Artichoke Ragout


1 - ARTICHOKES, (14 OZ CAN) cut into quarters
10 ounces - MUSHROOMS, BUTTON, ¼ diced
6 ounces - MUSHROOMS, SHITAKE, ¼ diced
6 ounces - MUSHROOMS, OYSTER, sliced
2 ounces OLIVE OIL
1 GARLIC CLOVE, MINCED
½ teaspoon THYME, FRESH, CHOPPED
½ cup WHITE WINE
RED PEPPERS, 1/8 X 1/8 X 1 MATCHSTICK

Put olive oil in sauté pan and add garlic and cook for one minute.
Toss in remaining items and cook for 15 minutes
