The Delicious Chef, Celebrate the Summer

Continue to celebrate the Indian Summer with delicious and flavorful foods that are easy to prepare, and perfect for a picnic or an outing to the Hollywood Bowl.

Chef Ronnie Woo is executive chef and owner of The Delicious Cook, a private chef company specializing in intimate 4-Star Dinner Parties. He says  "there is no better way to continue to celebrate summer than with a fun picnic outing with family and friends, or even a date night". Picnics and light easy meals are a great way to enjoy the outdoors with amazing food and good company.  Ronnie loves traveling and exploring the world and different cuisines. Today's picnic spread was inspired by some of his travels around the world.

Authentic Greek Salad: I just got back from Greece and this instantly became one of my favorite dishes they served there. It's chock full of fresh vegetables and a big slab of feta and some herbs. This salad is great for sharing and is very portable… just add a dash of salt and pepper, and a drizzle of red wine vinegar and extra virgin olive oil and you have a authentic Greek salad!"

Recipe:

  • Tomatoes
  • Cucumbers (peeled)
  • Red Peppers
  • Green Peppers
  • Kalamata Olives
  • Slab of Feta
  • Onion (optional)
  • Romaine Lettuce (optional)
  • Sprinkle of dried oregano
  • Sprinkle of dried dill
  • Extra virgin olive oil
  • Red wine vinegar
  • Salt
  • Pepper

 
Instructions:
Cut up and serve all the vegetables undressed topped with a slab of feta cheese. Season with olive oil, red wine vinegar, salt, and pepper to taste!

French Crème Ninon with Cheddar Buttermilk Biscuits: This is my fun spin on a French Pea Soup. What I love about this recipe is that it sounds fancy, but is actually incredibly easy to make. The main ingredients are shallots, garlic, peas, which you can use frozen peas, champagne, chicken stock, and whole milk. Most of the flavor comes from the caramelized shallots and garlic, and all you really do it puree everything up, drizzle with some olive oil, and wham, bam, thank you ma'am, we have crème ninon!

Vietnamese Pork or Chicken Banh Mi Sandwich with Pickled Vegetables: If you have never had a Banh Mi sandwich, you are missing out.  These Vietnamese sandwiches consist of the perfect combination of marinated meats and pickled vegetables all wrapped in an airy baguette. There sandwiches are incredibly easy to assemble and perfectly portable for this "picnic around the world"!

Pickled Vegetables:

  • 3/4 cup of thinly sliced red radish (or daikon)
  • 3/4 cup of thinly sliced carrots
  • 3/4 cup of thinly sliced cucumbers
  • 3/4 cup of thinly sliced red onion (optional)
  • 1/4 cup of thinly sliced jalapenos (optional)
  • 1/2 cup of unseasoned rice vinegar
  • 2 tablespoons of sugar
  • 1 teaspoon of kosher salt
  • 1 tablespoon of toasted sesame oil

Marinated Meat:

  • 2 tablespoons of fish sauce
  • 2 tablespoons of soy sauce
  • 2 tablespoons of sugar
  • 1 tablespoon of toasted sesame oil
  • 1 teaspoon of freshly ground black pepper
  • 1 teaspoon of kosher salt
  • 4 garlic cloves, finely minced
  • ¼ cup of fresh basil, finely chopped
  • 1.5 pounds of thinly sliced chicken, pork, and beef

Other:
Mayonnaise
Fresh cilantro
Light and airy French baguette

Instructions:

  1. Combine all the pickled vegetables ingredients in a large jar. Close the lid, shake to dissolve the sugar, and transfer to the fridge for at least 6 hours or overnight.
  2. Combine all the marinade ingredients, except for the meat, in a large bowl and whisk until combined. Transfer the marinade to a large plastic bag along with the meat and marinate for at least 6 hours or overnight.
  3. When the meat is done marinating, heat up a cast-iron grill and cook the meat for about 3-4 minutes on each side, until cooked through.
  4. Assemble the sandwich by first applying a thin layer of mayonnaise onto each cut side of the French baguette. Then layer on some grilled meat and pickled vegetables. Finish with some fresh cilantro and enjoy!

Watermelon Lime Mint Agua Fresca: There is nothing quite like this refreshing Mexican drink! There are so many different types of aqua frescas you can make, but one of my favorite flavors is the refreshing watermelon! I love adding a splash of lime and a hint of mint to the mix as it only makes it that much more refreshing. Make this in a big portable pitcher and when you get to your destination, simply shake it up with some ice (and maybe some tequila) and you have an amazing cocktail!

  • 2 cups of cold water
  • 2 cups of watermelon, seeded and chopped
  • 2 tablespoons of sugar
  • Juice of ½ lime
  • ½ cup of fresh mint

Instructions:
Combine all ingredients together in a blend and puree until smooth. Pour through a strainer and chill until ready to serve.

 

Fun Facts About Ronnie Woo:

  • His parents had strongly emphasized education throughout Woo's childhood. In keeping with these values (and while still modeling).
  • He returned to college and earned a Bachelors degree in Psychology. Furthermore, Woo now also have two graduate degrees – a Masters in Business Administration and a Masters in Counseling Psychology.
  • Woo's passion for all things cooking and eating conjures up some of my earliest childhood memories be they sitting alongside my mom or grandma as they prepared a delicious dinner to fishing with my dad and eating our fresh catch. So it was at an early age that I developed an appreciation for the important role cooking, sharing and enjoying good food should play in everyone's life.
