Cooking for Dads: Grilled Greek salad

INGREDIENTS

2 chicken breasts

1 head romaine lettuce

1 cucumber

1 red onion

fresh oregano

fresh thyme

fresh basil

1 lemon

olive oil

rice vinegar

dijon mustard

salt and pepper

sugar

Cut chicken breasts into strips longwise.

Chop up lettuce, cucumbers, tomatoes and a little onion and assemble for your salad.

FOR CHICKEN MARINADE, COMBINE:

4 spoonfuls olive oil

juice of 1/2 lemon

1 large clove garlic chopped

1 sp fresh thyme

1 sp fresh oregano chopped

1 large basil leaf chopped

1/2 sp salt

Add chicken and stir to coat. Set aside for up to an hour if possible

Grill chicken until just firm, about 2 minutes a side. Remove and let cool.

FOR SALAD DRESSING, COMBINE:

2 sp olive oil

2 sp rice vinegar

2 sp lemon juice

1/2 sp sugar

1/2 sp salt

1/2 sp dijon mustard

1 sp fresh thyme

1 sp chopped onion

Combine salad dressing and salad and top with strips of grilled chicken.
