It's Good Day Atlanta's Food Truck Friday! On our plate today is a taste of Southeast Asia, courtesy of Nomie Truong and Viet Nomie's Gourmet!

Recipe: Com Chien (Fried Rice)
 
3 tablespoons olive or canola oil
1/3 cup sliced or chopped onions
3 cups of cooked rice
1 cup sweet Asian sausage, sliced
2 tablespoons fish sauce
1/3 cup of scrambled eggs
1 tablespoon green onion
Dash of pepper
 
Cook rice according to directions on the package.  Set aside.

Heat a wok or skillet on medium high to high heat.  Add in oil of preference.  Add the onions and Asian sausage to the oil and sautee until both are lightly browned. 

To the same pan, add in cooked rice, eggs, fish sauce, green onions and pepper.  Continue to mix until all ingredients are incorporated and the rice is light brown in color.  Plate and serve.
 
Yields:  Approximately 2 servings
