Cinco de Mayo is just a few days away, and Good Day Atlanta is celebrating early with Mac Helms from Tex's Tacos in this edition of Food Truck Fridays!

Also on hand was Howard Hsu of Atlanta Food Park, and he filled us in the Atlanta Food Truck and Park events!

Tex's Tacos
Atlanta Food Truck Park and Market, 1850 Howell Mill Road NW, Atlanta

Recipe: Pastor de Puerco Taco
Pork marinated in chilies & pineapple, topped with grilled onion, pineapple, cheese and cilantro.
Servings: 16 tacos
2 LB Boston Pork Butt, diced into 3/4" cubes
Pastor Marinade:
1/4 of a medium yellow onion
1/4 Cup Pineapple Juice
1/4 Cup Orange Juice
1/8 Cup Distilled White Vinegar
1 Tbsp. Dark Chili Powder
2 Garlic Cloves, whole peeled
1 tsp. kosher salt
1/4 tsp. dried oregano
1/4 tsp. cumin
1 chipotle pepper in adobo
1 tsp. adobo sauce
1 onion julienned & grilled
1 bunch cilantro, minced
1 pineapple, diced into chunks
8oz of your favorite cheese, shredded
16 flour or corn tortillas
1) Combine marinade ingredients by processing in a blender into a liquid consistency
2) Pour the marinade over the diced pork and refrigerate for 24 hours
3) Grill the pork to 145F on griddle top stove
4) Heat tortilla and onions on griddle top
5) Fill warm tortilla (flour or corn) with 2 oz of grilled pork, 3-4 strips of grilled onion, 1/2 oz shredded cheese, 3-4 pineapple chunks, pinch cilantro.
