Rob Barrett of Cooking for Dads is in the kitchen cooking up flank steak even when outdoor grilling isn't an option.
Teriyaki Beef Skewers
1 lb flank steak
1 cup soy sauce
1 cup sugar
Make a simple teriyaki sauce by combining 1 cup soy sauce and 1 cup sugar with about an inch of ginger thinly sliced. Bring to a boil and stir until sugar is combined. Lower heat and let simmer for 5 minutes or until thickened.
Slice flank steak across the grain and on an angle. Place steak slices in plastic bag and pour cooled teriyaki sauce over the meat. (you can also use a store bought teriyaki sauce if you'd like.
Let marinate over night.
Remove meat and place on skewers long ways. Grill or broil until just pink on the inside. Serve with peanut sauce.
To use the next day, just sear the outside, wrap in plastic and put in refrigerator until ready. They place on the grill or under broiler to heat.
Rob's Easy Peanut sauce
In small pan combine 1/2 can coconut milk, 3 spoonfuls sugar, 3 spoonfuls peanut butter, 2 spoonfuls fish sauce, 1 spoonful Thai red curry paste.
Heat over medium heat until combined and
peanut butter is dissolved. Serve over skewers or on the side.
(Also good with chicken or shrimp.)
