Tasty dishes at the Salvation Army kitchen

The Salvation Army works every day to feed the less fortunate, making sure they walk away with at least one hot meal a day. FOX 9 talks with Chef James Green about his job at the Salvation Army's West St. Paul kitchen.

RECIPES

Smack-N-Cheese

10 oz package of Rotini Macaroni cooked according to directions

In double boiler melt:

6 oz of pepper jack cheese - cubed

6 oz of American cheese - cubed

6 oz of mozzarella cheese - shredded

½ cup of milk

Pour into warm and drained macaroni

Add:

2/3 cup of sour cream

5 oz. of Philadelphia Cooking Crème: Santa Fe flavor

Add milk as needed for creamy consistency

Add:

1 t Lowrys Season Salt

½ t Cheyenne pepper

1 T chili powder

1 t smoked paprika

Bake covered in a 350 degree oven for 20-30 minutes until heated through

 

Karate Chicken (quantity of 6-8)

Your choice of chicken – legs, thighs or breasts

Start with a Rub for the chicken:

2 T Italian Seasoning

2 T Poultry Seasoning

1 t cinnamon

1 t chili power

1 t Spanish paprika

1 t Hungarian paprika

Rub Chicken well and refrigerate in pan for at least 30 minutes

Pour in chicken broth to fill the pan about 1 ½ inches deep – Bake uncovered in 350 degree oven for 20 minutes.

Sqeeze the juice of two limes and mix in 1 t of Cheyenne pepper – pour over chicken and continue to bake until the internal temperature is at 165 degrees.
