In the Kitchen: Beth's Potato Salad

Chef Beth Fisher and General Manager Caroline Glawe, of Wise Acre Eatery, share the recipe for Beth's Potato Salad.

Beth's Potato Salad

Ingredients:

  • 5 lbs Yukon Gold Potatoes, large dice
  • 4 large carrots, large dice
  • 3 stalks celery, minced
  • 1 small onion, small dice
  • 1 1/2 C Mayo
  • 1/2 C Cider Vinegar
  • 1/2 C Sugar
  • 6 eggs, hard-boiled & rough chopped
  • 1/4 C Parsley, chopped
  • 2-3 t Salt
  • 1 t Cracked black pepper

Directions:

  1. Peel and dice Yukons and carrots.
  2. In a large pot, cover with cool water to 2 inched above the vegetables.
  3. Bring to a boil over high heat.
  4. Cook until very tender. Drain.
  5. Combine remaining ingredients in a large bowl.
  6. Fold in hot potato/carrot mixture.
  7. Cool and CHOW!
