1-1.5LB beef stew meat (stew meat is already chopped into pieces).
2 large cans (or cartons) beef broth
1 large can diced tomatoes
1 bag frozen peas
1 bag frozen sliced carrots
1 whole onion (yellow or white)
Potatoes (Add as many as you like. I usually use 1.5-2 pounds of chopped new red potatoes)
Brown meat in a pan.
Meantime, chop onion and potatoes to desired size.
Pour beef broth, crushed tomatoes, and onion in a large kettle and let simmer on medium heat.
Once meat is browned, add meat to kettle.
Eventually add all ingredients to the kettle and stir.
Give the stew time to combine flavors by leaving it on a low heat for anywhere from 30 min-3 hours. Stirring occasionally.
Add salt, pepper and garlic to your liking.
Best when served hot with a side of fresh bread. Enjoy!
