Turkey Meatballs
Ingredients:
- 2lbs Ground Turkey
- ½ c diced onions
- ½ diced sweet pepper
- ½ cup diced celery
- 1T diced garlic
- 1T diced shallots
- 1T fresh thyme
- 1T fresh cilantro
- 1T black pepper
- 1/2T salt
- 2 eggs
- 1 cup Panko bread crumbs
Directions:
- Mix all ingredients
- Shape into ½ ounce balls
- Bake in a pre-heated oven 10-12 minutes
- Serve warm
Bean Salad
Ingredients:
- 3 cans of different kinds of cooked beans
- 2 cup cooked Moroccan couscous
- 1 cup sweet peppers
- .5 cup each, onion, celery, carrots
- .25 garlic and shallots
- .5 cup ea/or mint and cilantro
- 1 T fresh lemon juice
- About a .25 cup Italian dressing "lightly coat"
Directions:
- Dice peppers, onion, celery, carrots, garlic and shallots finely
- Mix together all ingredients
- Salt and pepper to taste
