In the Kitchen: Turkey Meatballs

Chef Dan Vasterling, of St. Paul College, shares a Super Bowl recipe that's a healthy twist on a tasty favorite.

Turkey Meatballs

Ingredients:

  • 2lbs Ground Turkey
  • ½ c diced onions
  • ½ diced sweet pepper
  • ½ cup diced celery
  • 1T diced garlic
  • 1T diced shallots
  • 1T fresh thyme
  • 1T fresh cilantro
  • 1T black pepper
  • 1/2T salt
  • 2 eggs
  • 1 cup Panko bread crumbs

Directions:

  1. Mix all ingredients
  2. Shape into ½ ounce balls
  3. Bake in a pre-heated oven 10-12 minutes
  4. Serve warm

 

Bean Salad

Ingredients:

  • 3 cans of different kinds of cooked beans
  • 2 cup cooked Moroccan couscous
  • 1 cup sweet peppers
  • .5 cup each, onion, celery, carrots
  • .25 garlic and shallots
  • .5 cup ea/or mint and cilantro
  • 1 T fresh lemon juice
  • About a .25 cup Italian dressing "lightly coat"

Directions:

  1. Dice peppers, onion, celery, carrots, garlic and shallots finely
  2. Mix together all ingredients
  3. Salt and pepper to taste
