Breakfast is an important meal to start the day off right - but the traditional foods we think of are also fun and easy (and budget friendly) to entertain with! These individual breakfast cups are portion controlled for the busiest of days. Just grab one of these and a piece of fruit and you are out the door. We also like these for out of town guests, tailgating parties and lunches too.
Prepare potatoes according to package skillet directions; salt and pepper to taste. Stir in ham and 1 cup cheese. Divide among 1 (12 count) greased muffin pan.
In medium bowl, combine milk and eggs; salt and pepper to taste. Whisk until well combined. Pour over potatoes.
Top with remaining cheese. Bake in a preheated 350°F oven 20 minutes or until eggs are set.
Tip: Cool completely and freeze. Microwave (HIGH) 2 minutes or until hot for a quick breakfast.
