Rain dampened many businesses that rely on the outdoors over the weekend, but business owners who spoke with FOX 9 News say they're optimistic the rest of the winter will be snowier than Saturday.
At the north lot of the Mall of America, there's an ice farm that has a castle for a crop. Chris Hulind and others are working to grow -- not build -- the castle that they hope will be harvest-ready by the end of the month.
"This one, by far, will be the largest one we've ever built," Hulind said.
Millions of gallons of water will create the huge icicles that comprise the foundation. When it's finished, it will span more than an acre at a towering 40 feet, with lit caverns, tunnels and walls; however, the rain washed away a lot of progress.
"Anything we built that day -- or a couple hours prior to that day -- is all history," Hulind said.
Even so, Hulind predicts the ice castle will be open by January.
