In the Kitchen: Coffee Baileys Gooey Butter Cake

Pastry Chef Crystal Wenaas and Executive Chef Jessica Jensen, of Primebar at Calhoun Square, joined FOX 9's Karen Scullin in the kitchen to talk about the 23rd Annual Coffee Festival and share delicious coffee dessert.

Primebar's Coffee Baileys Gooey Butter Cake

Crust:

  • 15 oz Yellow cake mix
  • 1 Egg
  • 1 stick of melted butter or ½ cup of melted butter

Filling:

  • 1 shot or 2 to 3 oz of espresso or extremely strong coffee
  • 8 oz cream cheese, at room temperature
  • 2 eggs
  • 1 tsp vanilla
  • ½ cup of melted butter
  • 1 lb. powdered sugar

Baileys Whipped Cream:

  • 1 cup cold whipping cream or you can buy the already whipped cream
  • 2 oz (or ¼ cup) Baileys
  • ¼ cup powdered sugar

Coffee Ganache:

  • 1 cup chocolate chips (semi-sweet)
  • 2 oz (or ¼ cup) half and half
  • 2 oz (or ¼ cup) coffee (strong or espresso)

Procedure:

  1. Mix all of the ingredients for the crust into a bowl. Mix this together with your hand.
  2. Press into a greased 8x8x2 inch metal baking pan. Bake in a 300 degree oven for 10 to 15 minutes.
  3. Pull and cool.
  4. Next, make your filling. If you have a stand mixer or a hand mixer, you can throw all of this together and whip until creamy and there are no lumps. If not, throw into a bowl and cream with a hard spatula until same result.
  5. Pour this mixture on top of the crust and smooth out so the mix touches all the edges.
  6. Bake at 300 degrees for 20 to 30 minutes just until it is set and still gooey. Cool down fully in refrigerator.
  7. After the cake is completely cooled and set, use a stand or hand mixer with the whip attachment and whip until the cream is sticking to the whisk and creating peaks when you pull the whisk from the bowl.
  8. Keep whisking and add Baileys and powdered sugar. Make sure not to over whisk.
  9. Make a double boiler for the next step. Place the chocolate and half and half into the bowl and let melt. When it is melted and shines, add the coffee and mix in thoroughly.
  10. Decorate your cake with the Bailey's whipped cream any way you would like.
