3-Meat & Bean Chili

Prep Time: 20 minutes

Crock Pot cook time:

  • LOW 6-8 hours
  • HIGH 4-6 hours

*Crock pots vary so adjust time as needed

Ingredients:

  • 1 cup water
  • 1 cup chopped red bell pepper
  • 5 cloves garlic
  • 1 medium onion, diced
  • 2 celery stalks, chopped
  • 2 (26 ounce cans) crushed tomatoes
  • 1 teaspoon ground black pepper
  • 1 ½ teaspoons ground cumin
  • 2 teaspoons salt
  • 1 teaspoon ground chipotle pepper powder
  • 1 ½ teaspoon crushed red pepper flakes
  • 5 tablespoons chili powder
  • 1 pound beef stew meat
  • 1 pound boneless, skinless chicken breast meat, cut into 1 inch cubes
  • 1 pound Andouilli sausage or Hot Italian sausage, cut into 1 inch pieces
  • 2 (15.5 ounce) cans chili beans
  • 2 (15.5 ounce) cans dark or light kidney beans

Directions:

  1. Using a blender puree the water, peppers, garlic, onions and celery. Pour mixture into the crock pot.
  2. Add the remaining ingredients to the crock pot, stir to blend all the seasonings in.
  3. Cover and cook.
  4. Top with shredded cheddar cheese and sour cream before serving.


Spicy Chicken, Broccoli & Dumpling Stew

Prep Time: 20 minutes

Crock Pot cook time:

  • LOW 6-8 hours
  • HIGH 4-6 hours

Ingredients:

  • 6 cups chicken broth
  • ½ cup parsley, rinsed
  • 1 pound frozen broccoli florets, thawed
  • ½ cup shredded carrots
  • 2 celery stalks, chopped
  • ½ onion, chopped
  • 3 cloves garlic, cut in half
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons crushed red pepper flakes
  • 1 pound fresh broccoli florets, chopped
  • 2 pounds boneless, skinless chicken breasts, cut into 1- inch cubes
  • 1 pound package of potato gnocchi
  • 2 cups whole milk
  • Parmesan cheese for garnish

Directions:

  1. Using a blender, puree 3 cups of chicken broth with half of the parsley, broccoli, carrots, celery, onion and garlic.
  2. Pour the mixture into the crock pot.
  3. Repeat using remaining 3 cups of chicken broth, parsley, broccoli, carrots, celery, onion and garlic. 2. Add the salt, black pepper, red pepper flakes, fresh broccoli florets and chicken to the crock pot, stir to blend all of the ingredients.
  4. Cover and cook
  5. In the last 20-30 minutes stir in the gnocchi to cook until they are floating and cooked through.
  6. Just before serving, add the whole milk, stirring to incorporate and let sit for 10 more minutes.
  7. Sprinkle each serving with parmesan cheese.


Tuscan Tortellini & Meatball Soup

Prep Time: 20 minutes

Crock Pot cook time:

  • LOW 6-8 hours
  • HIGH 4-6 hours

Ingredients:

  • 6 cups chicken broth
  • 1 (15 ounce) can crushed tomatoes
  • 1 cup chopped fresh broccoli
  • 1 cup chopped fresh cauliflower
  • 1 medium zucchini, diced
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon ground black pepper
  • 1 teaspoon salt
  • 2 bay leaves
  • 1 pound frozen cheese tortellini
  • Parmesan cheese for garnish
  • Fresh or Frozen Turkey Meatballs *

 

*Fresh Meatballs

Ingredients

  • 1.25 pounds ground turkey
  • ½ cup Italian bread crumbs
  • 1 egg
  • ¼ cup shredded parmesan cheese

Directions:

  1. Mix all ingredients together in a mixing bowl
  2. Form into walnut sized balls
  3. Place raw, uncooked meatballs into crock pot after mixing soup ingredients as directed below


Directions:

  1. First, mix all the ingredients in the crock pot without the meatballs and tortellini
  2. Add meatballs last, and stir
  3. Cover and cook
  4. In the last 30-45 minutes, add frozen cheese tortellini, cover until pasta is cooked through
  5. Sprinkle each serving with parmesan cheese.
