In the Kitchen: Hot sandwiches

Many people struggle to find time to cook, but Kirsten Shabaz came to the FOX 9 Kitchen to share some fast, hot sandwich ideas for on-the-go families.


Hot Ham & Swiss Sandwich

Yield: 6 servings

Ingredients:

  • 1 loaf Focaccia bread, sliced crosswise
  • 3 tablespoons Dijon mustard *or more if you'd like
  • 10 – 12 slices of Swiss cheese
  • 1/3 – ½ pound deli sliced Black Forest ham


Preparation:

  1. Preheat oven to 350 degrees.
  2. Open focaccia loaf, set top aside. Spread 1 ½ tablespoons of the Dijon mustard on the bottom of the loaf.
  3. Place a layer of Swiss cheese, about 5-6 slices, over the Dijon mustard.
  4. Layer the sliced ham over the Swiss cheese.
  5. Place the remaining Swiss cheese slices over the ham.
  6. Spread the last 1 ½ tablespoons of the Dijon mustard over the cheese and place the top of the loaf on the sandwich.
  7. Wrap in tin foil to completely cover the sandwich & bake for 45 minutes or until heated through.
  8. Cut into wedges before serving.

 

Hot Chicken, Sun Dried Tomato & Spinach Sandwich

Yield: 6 servings

Ingredients:

  • 1 loaf Focaccia bread, sliced crosswise
  • ¼ cup sun dried tomato pesto
  • 10 – 12 slices of Mozzarella cheese
  • ½ pound deli sliced roasted chicken breast
  • 2 cups fresh spinach leaves


Preparation:

  1. Preheat oven to 350 degrees.
  2. Open focaccia loaf, set top aside. Spread ½ of the sun dried tomato pesto on the bottom of the loaf.
  3. Place a layer of Mozzarella cheese, about 5-6 slices, over the sun dried tomato pesto.
  4. Layer the sliced roasted chicken breast over the cheese.
  5. Spread out the fresh spinach over the sliced deli meat.
  6. Layer the remaining sliced roasted chicken breast over the spinach.
  7. Place the remaining cheese, about 5-6 slices, over the sliced deli meat.
  8. Spread the remaining sun dried tomato pesto over the cheese and place the top of the loaf on the sandwich.
  9. Wrap in tin foil to completely cover the sandwich & bake for 45 minutes or until heated through.
  10. Cut into wedges before serving.

 

Double Cheesy Roast Beef Sandwich

Yield: 6 servings

Ingredients:

  • 1 large onion, thinly sliced
  • 2 tablespoons butter
  • 1 loaf Focaccia bread, sliced crosswise
  • 1 jar Cheese whiz
  • 10 – 12 slices of Provolone cheese
  • ½ pound deli sliced roast beef

*Optional: You can also add sautéed mushrooms and or sliced sautéed green peppers


Preparation:

  1. Preheat oven to 350 degrees.
  2. In a large skillet, melt butter. Add sliced onions and cook over medium-high heat for 15-20 minutes or until brown & caramelized.
  3. Meanwhile, open focaccia loaf, set top aside. Spread ½ of the cheese whiz on the bottom of the loaf.
  4. Place a layer of Provolone cheese, about 5-6 slices, over the cheese whiz.
  5. Layer the sliced roast beef over the Provolone cheese.
  6. Spread the caramelized onions over the sliced deli meat.
  7. Layer the remaining sliced roast beef over the onions.
  8. Place a layer of Provolone cheese, about 5-6 slices, over the sliced deli meat.
  9. Spread the remaining cheese whiz over the cheese and place the top of the loaf on the sandwich.
  10. Wrap in tin foil to completely cover the sandwich & bake for 45 minutes or until heated through.
  11. Cut into wedges before serving.
