Ingredients: 1 Spanish onion (small dice) 1 poblano pepper (small dice) 1 red pepper (small dice) 1 pounds bacon chopped 1.25 cups molasses 1.5 bottles ketchup 3/4 cup bourbon 4 tbsp. of yellow mustard 1 cups brown sugar 4 quarts great northern beans
Procedure: In a large soup pot cook bacon until brown. Add onions and peppers and continue to cook on medium heat until vegetables are translucent. Add brown sugar and cook until it has dissolved.
Next add all other ingredients except for the beans. Bring to a simmer. Add the beans and continue to cook on medium heat for 15 minutes. Transfer into a deep pan sprinkle the top with brown sugar and bake uncovered for 45 minutes at 350 degrees.
