In the Kitchen: Healthy lunches

Back-to-school means many families will be getting back to routines -- and that should include time to make and prepare healthy lunch options. FOX 9's Karen Scullin got some ideas from Life Time Fitness' Alicia Rodriguez, nutrition coach and registered dietitian.

Hummus Wrap

  • 1 sprouted wheat wrap
  • 3oz Red pepper hummus
  • 1 1/2 oz Feta
  • ¼ avocado, sliced thin
  • 1 1/2 oz diced cucumber
  • 1 1/2 oz diced tomato
  • ½ c salad mix (romaine & spinach)
  • 1cup salad mix on plate
  • Pinch mixed nuts and craisins
  • Drizzle Balsamic dressing
  • 2 orange wedges


Garbanzo Salad:

  • 1- 14 oz can garbanzo beans, drained and rinsed
  • 3 roma tomatoes, seeded and diced
  • 1 english cucumber, diced
  • 3 green onions (scallions), diced
  • 1 orange or other sweet bell pepper, diced
  • 1/4 cup lemon juice
  • 2 tablespoons apple cider vinegar
  • 3-4 tablespoons olive oil
  • salt and pepper to taste
  • 4 oz feta cheese, crumbled (optional)
  • 2 tablespoons chopped fresh basil

Directions:

  • Combine ingredients in a bowl
  • Season with salt and pepper
  • Stir in feta and basil before serving.

TIP: Prepare a large mixed salad that can be divided up for kids and adults as a healthy lunchtime option
