8 Romeo Peaches, Peeled & Sliced
1 Red Onion (small), chopped
¼ C Ginger, grated
3 T Vegetable Oil
1 Qt. Orange Juice
¼ C Fresh Lime Juice
¼ C Honey
2 Jalapenos, Fine Diced
½ Red Onion, Fine Diced
½ Red Bell Pepper, Fine Diced
Salt & White Pepper, To Taste
Heat vegetable oil.
Lightly sauté onion, add peaches and ginger. Sauté for an additional 3 minutes.
Add orange juice and bring to a simmer.
Turn heat down and simmer for 15 minutes.
Blend in VitaMix and strain through fine mesh.
Add lime juice, honey and garnish.
Season with salt and white pepper to taste.
