This one is filled with flavor from herbs and spices, and packed with nutrients from all food groups – yes – all of them! Ingredients:
½ (13.25 ounce) package Essential Everyday™ Whole Wheat Thin Spaghetti
½ cup light mayonnaise
½ cup nonfat plain yogurt
2 tablespoons curry powder
1 tablespoon skim milk
¼ teaspoon ground cinnamon
¼ teaspoon cayenne pepper
2 cups broccoli slaw mix
2 cups chopped cooked chicken breast
1 large apple, chopped
½ cup Essential Everyday Cashew Halves & Pieces
½ cup Raisins
Directions:
1. Break pasta in half; prepare pasta according to package directions. Rinse with cold water; drain.
2. Meanwhile, in large bowl, combine mayonnaise, yogurt, curry powder, milk, cinnamon and cayenne. Toss with cooled pasta, broccoli slaw, chicken, apple and raisins; salt and pepper to taste.
3. Cover and refrigerate until ready to serve. Toss with cashews just before serving.
