Mitchell's Fish Market makes crab cakes

Mitchell's Fish Market has three locations in Metro Detroit.

Ingredients:

Step 1
Mayonnaise- 1cups
Gulden's spicy mustard- 1TBSP
Worcestershire- 1TBSP
Tabasco- ½TBSP
Italian parsley, minced (fresh)- ¼cups
Scallions, minced- ¼cups
Salt, kosher- ¾TBSP
White pepper- ½TBSP
Eggs, whole- 4each
Lemon juice, fresh- 1 ¼TBSP

Step 2
Claw crab meat- 2lbs
Panko bread crumbs- 2cups

Step 3
Jumbo lump crab meat- 2lbs


Process:
Step 1- In a large stainless bowl whisk together ingredients except crab meat and bread crumbs until well incorporated.
Step 2- In a large bowl gently combine claw crab meat and bread crumbs with wet mixture.  Mix by hand (with gloves on) until well incorporated.
Step 3- Very carefully fold in jumbo lump; be careful to not break up the crab meat.
Step 4- On a griddle, pour olive oil blend and sear cake on both sides until cooked all the way through (about 5 to 7 minutes).  
NOTE:  crab mix should be well chilled before portioning.   Portion with a scoop to 4oz cakes.
