Grilled Goat Cheese Crostini with Tomato & Olive Bruschetta
Bruschetta is a summery treat taking advantage of ripe, juicy tomatoes. Mix it up by adding in kalamata olives for a fresh new twist on a classic favorite.

Ingredients:
3 cups chopped tomatoes
½ cup Culinary Circle® Shredded Parmesan Cheese
1/3 cup chopped Kalamata olives
¼ cup diced red onion
¼ cup chopped fresh basil
- Essential Everyday™ Extra Virgin Olive Oil, divided
1 tablespoon Essential Everyday Balsamic Vinegar
1 teaspoon minced garlic
12 (½-inch) slices Culinary Circle Rustic Italian Bread (about 1 loaf)
1 large clove garlic
1 (4 ounce) package Culinary Circle Soft Goat Cheese
Directions:
1. In medium bowl, combine tomatoes, Parmesan cheese, olives, onion, basil, 1 tablespoon oil, vinegar and garlic; salt and pepper to taste.
2. Prepare grill to medium heat. Lightly brush bread slices with olive oil. Pierce garlic clove with fork; set aside.
3. Place bread on grill; grill, turning once, until toasted (about 2 minutes). Remove from grill and rub tops of bread with garlic clove.
4. Spread with goat cheese and top with bruschetta.
