
Chinese Tacos, Macadamia Lettuce Wraps
Cut one breast of chicken into thirds lengthwise, then cut those strips into bite size chunks.
Place in bowl and add:
a little salt and pepper
1 spoonful sesame oil
1 spoonful rice vinegar
1 spoonful soy sauce
Stir to combine and let marinate for 1-4 hours.
Prepare 4 large romaine lettuce leaves.
Chop 1 1/2 inches cucumber into small pieces.
Chop 1/2 yellow pepper into small pieces.
Chop 1 handful macadamia nuts.
Heat up a little sesame oil in a frying pan and add your garlic, cooking for 15 secs then the chicken mixture.
Cook until done, about 2 minutes. Turn off the heat and add 2 to 3 spoonfuls of hoisin sauce and stir.
In a medium bowl, combine chicken, nuts, cucumber and yellow pepper.
Place in lettuce wraps and enjoy. They have about 60 calories per taco.
(If in a hurry you can forgo the marinade and just cooke he chicken and add the hoisin sauce. It's still really good)
