These are savory pancakes so try the first one to see if you would prefer more sugar. You can easily double the sugar if you like a sweeter cake.
Mix together 2 cups sour cream with a ½ cup of your favorite goat or blue cheese (at Terra Waconia we love the northern lights blue cheese). Depending on the cheese you choose you may want to add a touch of salt or sugar or both. A little squeeze of lemon is a nice touch here as well. Just let your taste buds guide you.
Slice a pound of strawberries, toss with ¼ cup sugar and allow to macerate for about two hours.
Alternatively, make a simple syrup with ¼ cup hot water and ¼ cup sugar then combine the syrup with ½ cup of the sliced strawberries in a blender. Pour sauce over remaining sliced strawberries and toss to coat.
Now assemble. Cake, filling, topping /sauce. Repeat, go as high as you dare.
Serve with your favorite bacon.
