Chili is a great meal because it’s easy, delicious, and balanced. This is a great recipe because you can put it together quickly and then the slow cooker does the rest of the work. This recipe is smart, too because it uses skinless poultry, beans, and incorporates some tasty veggies, too. Try this one on a busy day (put it together in the morning) or for the next sports party you host.
1½ pounds boneless, skinless chicken breasts, cubed 1 tablespoon chopped garlic 1 tablespoon ground cumin 1 teaspoon salt 1 teaspoon chili powder ½ teaspoon cayenne pepper ½ (16 ounce) package Great Northern Beans, soaked, rinsed and drained 2 cups chicken broth 1 cup chopped onion 2 (4 ounce) cans diced green chiles, undrained 2 tablespoons chopped fresh cilantro
Directions:
1. In medium bowl, combine chicken, garlic, cumin, salt, chili powder and cayenne pepper; toss to coat. 2. Add seasoned chicken, beans, chicken broth, onions and chiles to a slow cooker. Cook on HIGH 4-6 hours or LOW 8-10 hours. 3. Stir in cilantro. Serve with sour cream and shredded Monterey jack cheese, if desired.
