Food on a stick is a major feature of Minnesota summers, and Beki Cook joined the FOX 9 Morning news to share how to make Banana Cake Pops.

Banana Cake Pops

Banana Cake Recipe

  • 1 ½ c. granulated sugar
  • ½ c. butter (at room temperature)
  • 2 eggs (at room temperature)
  • 1 tsp. vanilla
  • 2 c. flour
  • 1 ½ tsp. baking powder
  • ¾ tsp. baking soda
  • ½ tsp. salt
  • ½ c. buttermilk
  • 1 c. mashed ripe bananas
  1. Preheat oven to 350 degrees.
  2. Cream sugar and butter until light and fluffy (3 minutes). Add eggs one at a time, mixing well after each addition. Add vanilla.
  3. Sift together flour, baking powder, baking soda and salt.
  4. Add ½ of flour mixture to butter mixture. Mix well. Add buttermilk. Mix well. Add other half of flour mixture. Mix well. Add bananas. Mix well.
  5. Pour into greased and floured 9x13 pan. Bake for 30 minutes -- or until brown on the outsides --and until a toothpick comes out clean.
  6. Let cool completely.

Cream Cheese Frosting

  • 1 (8 oz) pkg. cream cheese (at room temperature)
  • 4 Tbsp. (1/2 stick) butter (at room temperature)
  • 1 tsp. vanilla
  • 2-4 cups powdered sugar
  • 1-3 Tbsp. milk
  1. When cream cheese and butter are soft and room temperature, combine. Add vanilla. Mix well.
  2. Add powdered sugar, one cup at a time until icing reaches desired consistency and taste.


To Make Cake Pops:

Supplies:

  • 1 cake- baked and cooled
  • 1-2 cups frosting
  • Candy melts or almond bark
  • 1-2 Tbsp. vegetable shortening
  • Lollipop sticks
  • Styrofoam disks
  • Sprinkles
  1. When cake is cooled, break into pieces into a large bowl. Use a fork to create small crumbs.
  2. Add icing, one cup at a time, and mix to combine. You have enough icing when the mixture forms a sticky ball easily in your hands.
  3. Using a tablespoon or a dough scoop, roll mixture into balls and place into the refrigerator to set- at least 3 hours or overnight.
  4. Pour candy melts or almond bark in a large microwave-safe bowl or mug. Add 1 Tbsp. vegetable shortening.
  5. Melt on low power in a microwave until just melted.
  6. Take cake balls out of the refrigerator 5 or so at a time.
  7. Dip lollipop stick in the melted candy. Insert stick about halfway into the cake ball.
  8. Dip cake ball into melted candy, coat with candy.
  9. Remove from candy and tap stick gently on side of the mug until excess candy has dripped from the cake pop.
  10. If desired, apply sprinkles immediately.
  11. Insert bottom of stick into styrofoam disk. Let cool until candy is set.
  12. Store in the refrigerator.

Yield: Approximately 50-75 cake pops
