In the Kitchen: Peachy Keen Salad

On Sunday, local author Pam Powell, who wrote "Salad Days," joined FOX 9 Morning News to mix up some Peachy Keen Salad.

Peachy Keen Salad Recipe
Yield: 6-8 servings

Ingredients:

  • 4 ripe but firm peaches
  • 7 oz. red and green leaf lettuce
  • 1 c. red onions
  • 1 c. Marcona almonds
  • ½ c. Sole GranQueso cheese, grated

Peach Vinaigrette Dressing

  • 3 tbsp. peach preserves
  • ¼ c. rice vinegar
  • 1 tsp. sweet onion, minced
  • 1 tsp. Dijon mustard
  • 1 ½ tsp. sea salt
  • ½ tsp. pepper
  • ½ c. fruity green olive oil

Preparation:

  1. Place all dressing ingredients except for olive oil in a small blender.
  2. Blend together until smooth.
  3. Pour into 1-quart glass bowl and gently whisk in olive oil until combined.
  4. Pour dressing into glass jar and refrigerate until ready to use.
  5. Wash and thoroughly dry lettuce. Chop.
  6. Slice peaches
  7. Arrange lettuce, place peach slices, marcona almonds and cheese on top
  8. Drizzle with dressing
