Falconer Vineyards in Red Wing stopped by to make it's Grapes of Wrath pizza! The vineyard is one of ten that was open for tours during the Great River Road Wine Trail.
Falconer Vineyards Bistro Signature Wood-Fired Pizza
Ingredients:
- Pizza Dough (or pre-made frozen dough, thawed)
- 1 tsp sugar
- 3/4 tsp salt
- 2 Tsp olive oil
- 3/4 c. warm water
- 1 tsp instant yeast (1 packet)
- 2 c. flour (bread flour is most ideal)
- corn meal for sprinkling
Pizza Dough Preparation
- Put all ingredients together in bowl, stir to mix the knead for 15 to 20 minutes. If KitchenAid-type mixer is used, this can be done using the bread hook.
- Form into ball, oil, cover, refrigerate 18 - 24 hours.
- Cut into 2, reshape into a ball, and let rest 1/2 hour.
- Flatten, stretch into shape.
- Place onto pizza paddle or inverted pizza pan sprinkled with corn meal.
- Coat with olive oil.
- For thin crust, immediately add toppings and bake. For thicker, let rest 1/2 hour.
- Place pizza stone on lowest rack in oven, preheat to 500 degrees.
- Slide crust onto stone (or can put pizza pan onto stone for 2 - 3 minutes, then transfer when crust is partially baked)
- Continue baking for total baking time of about 7 minutes.
Notes: Dough can be kept in the refrigerator for up to a week before using
