
On the skewer:
flat iron steak (.5 oz per skewer)
1/8 of a head of endive
slow cooked mushrooms
cherry tomato
Steak
Season flat iron steak with blackening seasoning. Make your own with equal parts cayenne pepper, oregano, cumin, and smoked paprika.
Cook steak to medium rare using your preferred cooking method.
Cut into 1/2 oz cubes and let cool.
Slow cook mushrooms in olive oil.
Assemble steak, mushroom, endive, and cherry tomato on skewer
Dressing
mix:
1 cup sour cream
1/8 cup mustard
1/4 cup buttermilk
1/2 cup faribault dairy st pete’s select blue cheese
2 tbsp garlic
makes dressing for approximately 16 skewers
Place skewers on top of dressing
